Homemade meatloaf, sweet potato mash and veg for was for tea tonight. Foooood cooooooma. For those of you who don’t know, I was born and raised in California. Meatloaf was a staple in my childhood and is a comfort food for me. It can be quite unhealthy depending on the ingredients used. A lot of recipes call for butter and brown sugar (sugar in meat, fricken Americans am I right?).
My version of this classic is only 265 calories for 1/4 of the loaf. Teamed with the sweet potato and veg this meal was under 500 calories. How can you lose?!
